Double-sided frying pan.
I got it yesterday. I made a quesadilla with eggs, jalapenos, and Carolina reaper cheese. It worked beautifully. Kept it on medium heat. Cooked one side topped it with the tortilla. Flipped it topped it with more cheese and a tortilla. Flipped it again, and the first side was done beautifully. Waiting a minute or so on the other side and removed it from the pan. There was no sticking to the pan. You just have to be quick when you flip! I can't wait to use it on my tortilla española and frittatas. They will be the big flip test. So, I made my tortilla Espanola. The pan was the perfect size. It was very thick and eggy, and it flipped beautifully possibly only a few dribbles, which beat the old way of a giant plate! The only problem that I have with the pan is that on the gas burner the pan does not distribute the heat properly, so there were parts that were shall we say a little crispier than I would prefer. That was cooking on medium heat. I will be making more, so I will probably go to maybe a medium low and cook it a little longer. I still love the pan!

Perfect for induction stoves
Had to find a replacement STEEL pan for omelets, etc. to replace a long time aluminum pan that is not compatible with new induction stove top. Also had to be non-folding (sadly) as induction stoves often don't like cookware that doesn't cover the whole induction element. (these stoves are smarter than they appear)Used it once so far and it does the job, it will take some practice to master the technique properly.Unfortunately, it was lacking packing material in the carton and it suffered a small "dent" in one half, but that does not affect its use.Best of all, a quality Made in Spain product, not something dodgy from Asia.

For Spanish Tortilla & other beloved dishes
Works well, just be sure to hold the handles tight when you flip it or you might have some clean-up to do.

Easy to turn
I always made my frittatas by flipping with a dish but unfortunately I no longer have the strength to do that. This pan has made flipping it easy with no spills. Definitely recommend

Pan warps while cooking
I liked the idea of this pan as I enjoy the periodic omelet. Had used it a few times with some success, although when flipping, there is leakage between the two pans, so flip it over the sink. However, the last time I used it, after flipping, the now bottom pan warped and would not sit flat on the induction cook top. It wobbled quite a bit. I tried to contact the manufacturer through their website, but they do not have a dropdown box for the United States, so no way to contact them.So keep searching for a pan set that holds up over time and has a manufacturer who stands behind their product.
