Taste like cheese.
My biggest problem with cheese was that they seem to go moldy before I finished the bag. This freeze dried cheese ends that problem. Never in a hurry afraid it will mode, just use as much as you need. I use a lot of different freeze dried products and just like most I find you need to test each product for water ratio to suit your taste. I found I liked it better if I used more water then the directions say, but that is only me of course, you will find the right ratio you like. It melts just fine and can be used in anything you use cheese for because it is real cheese.

This is really good cheese!
I bought this a couple of years ago, and it sat in my closet until yesterday when I was making lasagna and ran out of mozzarella! Cheese emergency, so I opened this and use it on two layers, and it is incredible! You can't tell the difference at all once it's baked. I didn't reconstitute it first, but I was using a slightly more liquid sauce because I was using those ready bake lasagna noodles, so it all worked out perfectly. Between the noodles and the cheese, the extra liquid got used up, and the lasagna turned out amazing. I was so impressed that I am here to buy another can to put back in my closet.I wasn't really sure how to store this once it was opened, so I ended up putting most of it in freezer bags (just as it comes out of the can, not reconstituted) and stuck them in my freezer. It took two quart sized freezer bags, fyi. The small amount that didn't fit the freezer bags and wasn't used in the lasagna, I just put in a small storage container in the fridge.I was truly impressed by this cheese! It would work equally well on pizza, but I think you would have to reconstitute it for that purpose, a thing I haven't yet tried but even if I only use it in lasagna or toss it into soups and sauces, it's wonderful!

That this cheese does melt and can be used on pizza or melted cheese sandwich.
Basically reconstituting this was easy but you should allow overnight for the cheese to moisterize and pump up fully. The cheese isn't really a true mozzarella, but a more of a combo of mozzarella and Monterey Jack, taste-wise. I found it to be good for a quesadilla, especially with a tomato-based salsa.

Emergency supplies
Bought this for an emergency but haven’t had an emergency yet so I’m not using it! I like the fact that it’s freeze dried and lightweight.

Can was packed full—unlike other brands I have ordered.
I haven’t opened this can but the can was full, unlike some other brands that I have bought that only seemed half full when I shake them. When this cheese goes on sale, I will buy another to have on hand for when bad weather hits and it is difficult to get to a store.

Total shock!
I was expecting survival level taste, I was completely wrong. I purchased the tri-cheese package, cheddar, mozzarella and jack. All three exceed the flavor and texture of good store labeled cheese. In fact, the mozzarella had a good 14in stretch when melted.. no dyes used so the cheddar didn't stain.. only would have liked a spicier pepperjack but you can always add heat.Quick tip. Place cheese in a solo-type cup. Add cold, filtered water to cover cheese. Let set for 10 minutes or so, drain all water out keeping cheese in cup. Place another cup on top of cheese and press down just until you get pushback. Leave press cup in place and stick in fridge overnight. Press top cup hard if you want a block style cheese, or remove top cup and fluff with a fork for grated texture. Awesome product!
