Fabulous low carb, ketogenic and gluten friendly pancake!!!
I bought this product as I started a ketogenic diet and the net carbs for these pancakes were the best I could find. I was skeptical due to some of the reviews, as people seem to either love or not love this product. I NEVER write reviews, but I LOVE this product so much that I felt compelled to chime in with my experience. The flavor is fantastic, the ease in mixing up egg, water and coconut oil, could not had been easier. I also added a tsp of cinnamon as I like to dress up my food. The pan cake batter does come out unusually thick, therefore I simply added a bit more water until I reached the consistency that I felt would work best for me. Once the pancake is cooked, it does have a bit of a slight dry look, but what gluten free baked product out there does not? I turned these fabulous pancakes into the most delightful treat (trust me, dry was noticed when I got done with these) and as a result I am now an addict of this product! One half cup serving is 110 calories (dry) so this is an extremely calorie friendly product as well. I get about 8 smallish to medium sized pancakes per 1/2 cup of product. I eat 4 and put 4 in the fridge until the next morning as amazingly enough they do heat up fairly well. Now, this is the part where these pancakes become downright sinful. I add 3 tsp total of smuckers sugar free strawberry jelly evenly spread out to the tops of these 4 pancakes. I then add about 3 TBS of Lakanto (or smuckers sugar free) sugar free maple syrup. I also could not resist but to squirt a tbs or two of sugar free whipped cream on the top. The end result is a delicious substitute to strawberry shortcake. I am big on calorie count (have lost 117 pounds to date with only 10 more to go counting calories) and this entire 4 pancake meal with the sugar free syrup, jelly and whipped cream comes out to be around 350 total calories. I have been eating it daily for breakfast and I am now on my 4th bag of this stuff!! Yes, as mentioned it does appear a tad bit dry compared to your traditional high carb, gluten filled, higher calorie buttermilk pancake. However, for what this product offers (for me, low calorie, low carb, no sugar and for my husband gluten free) it is absolutely beyond amazing. I have since gone off ketogenic and back to my standard calorie counting diet, but for those who are eating the ketogenic way, I was able to maintain moderate levels of ketosis while eating this product for breakfast every other day. I did add lots of butter to the pancakes while on the ketgenic diet to aid in maintaining ketosis, which for those who choose to eat that way know healthy fats is a bit part of the ketogenic life style. Excellent product though!

Best Pancake Product EVER
I could eat (and HAVE eaten) these straight out of the pan with no butter or toppings! Perfect texture! Delicious taste! Doesn’t affect my blood sugar!! This is the best money spent on pancake mix!! So much easier than making homemade keto pancake mix!!

Really, not bad at all
Update 02.20.2021: I don't know what they did but these have gone from not bad to downright horrible. It looks like they made some changes to the recipe and now you have to add vanilla, and they dropped the coconut oil. This tastes like over sweetened eggs with almond flour added to them. Even adding cinnamon to the batter to help improve the flavor doesn't work now. The pancakes were okay and edible before they made this change, but now they are just bad.I had my doubts. I'm not a fan of low carb foods, similar to this. They usually turn out grainy, and bland. For some reason, low carb/keto bread products, and baked goods make me gag, so I can be a very fussy critic with this type of food. My expectations were really low. But, I was surprised how good these were. After the second try at making these, I realized they take a little longer to cook than regular pancakes, and I added a little more water, than suggested, to thin the the batter. Doing that made them a little less heavy. Aunt Jeremiah's thick and rich sugar free pancake syrup (0 Carbs) is a great match for these pancakes. Adding cinnamon also makes these taste much better. Totally satisfied my urge to eat regular pancakes.

Formula changed
This latest batch is sweeter and apparently has more leavening.I had gotten used to the subtle sweet flavor of the last formulation. This batter is also a bit thinner despite the recipe indicating to use 1/3 cup compared to the previous 1/4 cup of mix to the same amount of wet ingredients. My waffle maker went crazy, spewing out batter from the sides. I honestly prefer the last formulation. I am acutely aware of the sweetness now. I’m thankful there is no strange aftertaste, so at least there’s that.The waffles are fragile upon removing from the maker, though they do firm up after removal somewhat.I’m sure this appeals to a broader audience, as anything I really like is generally discontinued or changed. Here is a case in point...There is no reason to use syrup now or a berry sauce. I may figure out how to make waffles from scratch now to avoid the sweetness (from a sweetener manufacturer). I have enjoyed the convenience to be sure.

I'm going with 5 Stars for Lakanto Pancake/Waffle mix. OK, dig. I'm 69 years old. Fondest childhood memory is my grandmother's kitchen and an electric waffle iron. She made waffles from scratch. I guess that's what you do with a flour sifter. SO, I purchased a waffle maker on Amazon. Works great. Was inexpensive. BUT even using some good quality waffle mix and locally sourced maple syrup (still had chunks of tree in it) my glucose readings shot up and triglycerides went to the moon. Knew in advance that a little of that was going to happen (have Type II diabetes and am reasonably careful. SO, feeling bad that I couldn't have waffles any more I was curious when I saw Lakanto low-carb high protein pancake and waffle mix AND the Lakanto Maple (flavored) syrup. Purchased both. Gave them a try. Loved them. Taste good (different from 'regular' flour mixes). Made a few waffles (let's call it once every couple of weeks) and YAY! NO new glucose problems. I can have a wonderful moment eating a warm delicious tasting waffle with maple syrup on it. Guess next I'll trying making pancakes. Thanks Lakanto. If your thinking about purchasing Lakanto mix or syrup do it. You'll be happy you did. Tom in Boston MA.
