Just like Sicily
The way pistachios are used for all ilk cooking and desserts in Sicily was a revelation. This pesto is a great place to start recreating some of those dishes.

Is this a pesto or just a pistachio spread?
To me, pesto is a sauce, usually made with some combination of olive oil, basil, garlic, and pine nuts. Usually salty, usually with a hard cheese like parmesan. When I saw a pistachio pesto, I knew I wanted to try it.The texture is very thick and grainy. It’s not a sauce in the traditional sense - more of a paste. I think you would have to mix it with more olive oil before it would be of a consistency that could be tossed with pasta. But in this form, it could be used as a spread, maybe as a savory topping for certain kinds of dishes.It also doesn’t have all of the herbs one would expect in a ‘pesto’ sauce. It tastes of pistachios. Delicious, salty, freshly roasted pistachios - and a very nutty-salty flavoring. It’s very good, but it’s not something I can substitute into the dishes I normally make with pesto sauce.Maybe this would make a good nut butter substitute for a traditional nut butter and jelly sandwich? That sounds like a fun experiment…just don’t think of it as a pesto and you’ll be fine.

Absolutely delicious!
This was EXACTLY what we wanted to re-create the delicious Italian sandwiches made with mounds of paper-thin slices of mortadella, creamy burrata cheese and pistachio pesto with arugula, fresh basil and a cascade of chopped toasted pistachio nuts on warm artisan bread! The consistency of the pesto is thick but it spreads beautifully. Silky but not overly oily. Well-flavored but not too salty. We've also used it on pasta and as a spread on crostini with a pinch of flaky Maldon salt. Excellent quality and taste! ♥︎

Not a great deal of flavor for a pesto.
As I honestly expected, the taste of pistachios in this pesto is very overpowering. It was all I tasted, and had to check the ingredients to be sure there were anything else added besides pistachios! I have had pistachio pesto before and you can clearly taste the olive oil, basil, garlic, and so on. Not with this, unfortunately. If you really love pistachios, you will like this, safe to say. But I hope it isn't just my taste buds at fault, yet I would strongly suggest to season this a little to really enjoy it. At least it's not very salty, and has a smooth and creamy texture to it.
