Does this mouse work on any surface?

Optical mice work well on most opaque diffusely reflective surfaces like paper. Most will not work properly on reflective surfaces like polished stone or transparent surfaces like glass. This mouse does not use dark field illumination (which works on reflective surfaces) therefore the available surfaces are limited to non-reflective.

What does the single button behind the scroll wheel (on top of the mouse) do?

It tells you in the product description "Hyper-fast scrolling: Fly through documents and web pages using the hyper-fast scroll wheel or shift to click-to-click scrolling when you need precision". The button lest you use a free-wheeling mouse wheel which is super fast and super sensitive, or press it and have it be like a normal mouse with a slow scroll that clicks when you rotate the scroll wheel.
