What would cause all the channels to come on without using the remote. It does this randomly in my van and i know i have it wired correctly.

Why is there a different wiring diagram for lites and motors?

lights only need on and off, while motors need forward and reverse, so you need two relays to control one motor.

How to connect this to a dust connector? Do I have to splice the wire and connect it to the device?

Anyone having issues with the 12v turning on by itself? How do I fix that?

Yes! Mine turns on by itself a lot. I'm very disappointed. Imagine if I had it connected to a detonator in an explosive vest. 😪 I'm going to try a different one, I do not recommend this one.
