Multi functional. LOVE this pan
Great pan. I use it as a gratin and fry food other than fish. It’s a pleasure to use and it’s beautiful.

Works really well
This is my first polished copper pan. I used it to make an omelet, which the oval shape was perfect for. It heats evenly and quickly. It also cools down pretty quickly. The copper does looked stained after my first use, and I think you might need to keep it polished to look it's best. I can't imagine keeping up with that, but I am also not too concerned about anyone seeing it. It is pretty easy to clean.
