Such a beautiful knife.Feels really good in your hand and the blade has just enough flex, will make an outstanding fillet knife.As much as I like this knife, I don`t understand why a blade guard is not included.Nothing worse than reaching into a drawer and getting a nasty cut, yes that has happened to me, more times than I want to remember. (I know I should be more careful, but when one is in a hurry one forgets.)I did just slice up some chicken, very thin works like a charm, I just had to try on something.Not having a blade guard is the only reason this knife isn't 5 stars.Has a side note I did fashion a sort of guard out of a paper towel roll and that will work for a while.
